Ever eat pineapple and your mouth goes “ OW… spicy?” That’s not imagination—pineapple nibbles back.
Pineapple contains an enzyme mix called bromelain—basically tiny protein-scissors. Your mouth lining is made of
proteins… so bromelain can irritate it a little. Pineapple is also acidic,
which adds a second “ sting” on top. So it’s a tag-team:
enzymes + acid = tingles, sometimes tiny soreness. The core can feel harsher because
it can have more of that enzyme action. Cooking pineapple reduces bromelain—so grilled pineapple
usually bites less. If you get swelling, hives, or trouble breathing—treat
