Hey everyone! Today, we're making a delicious Pistachio Ramen with Crispy Tofu.
Let's get cooking! Soak pistachios in hot water for 15 minutes. Press extra-firm tofu
to remove excess water. Cut into cubes, then toss with curry paste and
soy sauce. Air fry or pan-fry until golden and crispy. Cook wholewheat noodles
according to package directions. Blend soaked pistachios, spinach, aromatics,
and broth. Simmer this vibrant mixture with coconut milk. Add lime juice
and soy sauce to taste. Divide noodles, then ladle over the creamy broth.
Top with crispy tofu, hemp seeds, coriander, and chili flakes.
