is 1 kg carrots, peeled and finely grated (red, juicy winter carrots
are preferred) 1.5 liters full-fat milk ¼ cup basmati rice, rinsed,
drained, and coarsely ground (optional, for the traditional gajrela texture)
1 cup granulated sugar, or to taste 4 tbsp ghee (clarified butter)
½ tsp ground cardamom powder ½ cup mixed nuts (almonds, pistachios,
cashews), chopped, for garnish and flavor Instructions
Prepare Carrots and Rice: Wash, peel, and grate the carrots using a food processor
