Fried rice and chicken is actually one of the easiest meals you can master at home.
The secret most people miss is using day old rice from the fridge. Fresh rice is too
moist and creates a mushy disaster. Start by cutting chicken into bite sized pieces and
season with salt and pepper. Cook it in a hot pan with oil until golden,
then set aside. In the same pan, scramble two eggs and break them into small pieces.
Remove those too. Now crank the heat to high and add more oil. Toss in your cold
rice and break up any clumps. Add frozen peas, carrots, and diced onions.
The key is keeping everything moving in the pan. After three minutes, throw the chicken
