all smiles and soft voices, asking guests if they’d like a water refill.
But the second you cross over into the kitchen, that polite version of you has to die.
Back of House is a war zone where speed is the only language that matters. We don't say excuse
me, we scream BEHIND. We don't say unfortunately we've run out of that, we yell 86 the SALMON.
If you try to give a chef a long, polite explanation during a dinner rush,
you are actually being the problem. You have to be direct to be effective. Master the instant
switch from fine-dining angel to kitchen savage and you won't just survive the service,
