In the beginning, before the tall ships, before the cane fields,
before Georgetown rose from the mud flats, there were the first people,
the Amerindians, living along the rivers that carved Guyana’s shape. In their homes,
the fire was never fully out, always glowing in the corner, and from that fire
came Pepperpot. The rich, dark stew, slow cooked with cassareep and wild
peppers, wasn’t just a meal, it was memory. Every family knew that the pot on
the hearth held the stories of those who came before. Generations dipped their spoons into
the same tradition, one that could last days, just like the history it carried.
